Gluten Free Vegan Pancakes

Ingredients

  • 1/2 cup gluten free flour
  • 2 tbsp organic flaxseed meal
  • 4 tbsp water
  • 1 tbsp coconut oil
  • 2 tbsp lingon berry jam

Instructions

In a small bowl mix together your choice of gluten free flour, flaxseed meal, water and 1/2 tbsp of coconut oil

Heat a non stick pan with the remaining 1/2 tbsp of coconut oil and drop in the batter forming 4 in wide circles

Cook on each side for 2-3 minutes and transfer to serving plates

Top each serving with 1 tbsp of Lingonberry jam and fresh lemon zest

Way to start your day off! This is low fodmap due to gluten free flour and the type of jam used but feel free to replace the jam with maple syrup to stay low fodmap or if thats just not your thing, throw some fresh ricotta thats sweetened a bit with honey and cinnamon, just do not skimp on the zest. The lemon zest adds a touch of bright citrus to this dish which is a nice contrast to the earthy notes given from the coconut oil, a grapefruit or orange zest would work even better if your going the ricotta route. While I am not a huge fan of coconut oil, it sometimes is the right oil to use in place of Ghee, butter, or extra virgin olive oil due to its subtle fruity undertones (perfect for a sweeter breakfast) and high smoke point. What is even better about this, is that instead of using an egg, it was already claimed by a different recipe, a flax-egg is used and turns it vegan. A flax egg is quite simple, same ratio water to flaxseed meal for a nice bond between your ingredients, I like things cozy around here.
