Sweet Potato with Homemade Marshmallows

- 1 lb sweet potato cut on a mandolin or with a knife horizontally to 1/4" thickness
- 1 tsp Ghee
- 7 Insane Homemade Marshmallows
- 1/2 tbsp smoked paprika
- 1 tsp cayenne pepper
- 1/2 tsp ground cinnamon
- 2 pieces chopped bacon
- Salt and Freshly ground pepper
Instructions
Bring a pan with water to a boil and preheat oven to 350 F
Peel the sweet potatoes and slice to 1/4 thickness
Add the potatoes to the boiling water and cook for 10-15 min until tender then drain
Carefully mix Ghee, paprika, cayenne, salt and peppers in bowl with sweet potatoes then transfer to an 8x8 baking dish
Transfer to the pre-heated oven and in a separate pan cook the pieces of bacon util crispy ( about 3 min), drain the fat and pat dry
Top sweet poatoes with Marshmallows and cinnamon on top and bake for 5 min and add chopped bacon
Shut oven and allow to rest in oven for 5 minutes before serving immediately
Okay, so apparently Chardonnay and cooking sometimes just don’t mix. I am only human guys, and while cooking my sweet potato decadent dish, I forgot about it and most my Marshmallows melted. I was only able to salvage a few bites of the gooey topping so just a warning to keep you eye on it as it bakes and follow the time on the recipe above. Do not under any circumstances be distracted by cute puppies or pour yourself a second glass of wine until this is done, you’ll thank me later.
Nonetheless, even though I royally messed this up on the visual and textural front, the flavor was all there and it was amazing. It resembles a big bowl of candy with sweet potatoes that soak with the melting of the Marshmallows and the pieces of bacon get sucked into the crevices made as they melt. When paired with spicy sides and a meat, makes for a perfect Thanksgiving dinner.
