Lavender Yogurt Papaya Bowls

Ingredients

  • 1 small papaya
  • 4 tbsp pecan bits
  • 1 cup 2 % Greek yogurt
  • 2 tbsp heavy cream
  • 1 tsp organic vanilla paste
  • 2 tsp dried Lavender
  • 2 tsp orange zest
  • 2 honey based Holiday cookies ( Melomakarona pictured)

Instructions

Cut the top off the papaya, cut in half, de-seed with a spoon and then cut each half in half again

Use a pairing knife to run along the side of each quarter of the papaya to remove the skin then place 2 quarters on each plate

Use a hand mixer to combine the yogurt, heavy cream, and vanilla paste in a mixing bowl

Top the papaya with 1/2 of yogurt mix, 1 tsp lavender, 1 tsp orange zest and 2 tsp pecan bits

Take the honey based cookie and smash it a bit in your hands and layer on top of the yogurt

Notes

Melomakarona is a traditional Greek holiday cookie that is made with walnuts and soaked in a hot honey syrup once its cooled from the oven. Any nut based, cinnamon, or sugar cookie would work well in the recipe, use what you like to eat.

Need more things like this in my life. The way in which it is composed seems worthy of posing for a fruit still life that Cezanne would paint, if  he could even last that long before eating it that is. After your eyes pop at the visual complexity of the different textures and colors, the smell attacks your nostrils. First you get hit with the zest from the oranges then the delicate lavender follows. If you dare to get closer you’ll be pleased to find a robust earthy smell from the pecans that melds with the sourness of the yogurt. The best part is that every smell is followed by the sweetness of the papaya and the honey based cookie that was smashed on top (great use for extra cookies you have laying around, especially during the holidays), and if that wasn’t good enough the taste also follows suit in that order.
