Carrot and Celery Root Soup

Ingredients

  • 3 large carrots, peeled an chopped into 1/2 in pieces
  • 1/4 orange bell pepper roughly chopped
  • 1/2 cup peeled and chopped celery root
  • 2 tbsp butter
  • 5 cups vegetable or chicken broth
  • 1 scallion ( green part only)
  • 1 tbsp dried Basil
  • 1 tbsp turmeric
  • 1 tbsp fresh lemon juice
  • 1 tsp cayenne pepper
  • 1 in knob fresh ginger
  • 1 scoop Vital Protein's collagen powder
  • 1/4 cup chopped cilantro
  • salt & pepper

Instructions

In a pot heat the butter and add the carrots to sauté for 5 minutes. Add the bell pepper, celery root, scallion, and ginger knob and stir before adding 5 cups of broth of choice. Add the spices ( reserve the cilantro and collagen powder) before covering and cook on medium high heat for 20-25 minutes.

Transfer half the ingredients to a blender with the collagen powder. Blend on high and transfer to a clean pot. Repeat with remaining vegetables and broth and add it to the blended pot of soup. Toss in the chopped cilantro and fresh lemon juice stir, re heat if needed and serve.

Notes

If your not a low fodmapper, go all out. Top the soup with crème fraiche and chopped chives if you want to stay vegetarian. Add a open faced smoked salmon topped with cucumber to this soup for a more rounded meal during lunch, or just stick to bread and butter.

One of the most frustrating things about being on a modified low- fodmap is trying to get back into the swing of things when you have strayed a bit too far. Thats just life. You mean to do good and follow a certain path but as humans we sometimes veer off and thats ok. We just have to pick ourselves back up and get back on track. A little too much gluten here, maybe lactose overload, and your just feeling sluggish and need to kick start yourself.  Heres a delicious recipe to get your gut back into shape and your IBS under control, without FOMO. The heartiness of the celery root and sweetness of the carrot get kicked up a notch with spices and fresh ginger, can’t really ask for more than that, except for speed, which this hits it as far as elegant and refined soups go.
