Homemade Raw Nutella

Ingredients

  • 3/4 cup raw hazelnuts
  • 2 tbsp cocoa powder
  • 2 tbsp unrefined can sugar ( such as Just Panela)
  • 4 tbsp water
  • 1/2 tsp Ghee
  • dash of salt

Instructions

In a food processor place in the hazel nuts and mix for 3 minutes until a semi smooth nut butter is formed. Add the rest of the ingredients and pulverize until a smooth consistency is reached. If you find it too thick for your liking, add 1 tbsp of water at a time. Store in an airtight container in the cupboard.

Notes

If you want more depth of flavor and go for roasted hazelnuts, free free to roast your own or place in an oven at 350 F for 10 minutes.

Confession: I would intermittently spoon this into my mouth instead of the storage container as I was finished. The plan was to have it ready to top a sweet brown rice congee,  homemade cassava cookies, or top strawberries with it but now its much less than intended, whoops. Hopefully you cant tell I licked the spoon and the photograph makes the amount appear larger than it actually is ( close up shots!).  The smell of the hazelnuts was overpowering and just calling my name, combine that with more earthiness and buttery wisps of the vitamin packed Ghee and you have to be superhuman to resist. The chocolate comes from organic raw cocoa powder and blends beautifully to create a spread thats 1,000 times better than anything you buy at the store. Theres left over little crunchy pieces from the hazelnuts that add texture to the spread that just cannot be replicated in a warehouse. To take this to the next level, you can roast the hazelnuts before processing them into a nut butter. Add ins after the mixture is complete can include, orange zest, cinnamon, cayenne pepper, freeze dried berries or pineapple, and acai powder.
