Jicama Fries

Jicama Fries

Ingredients

  • 650 g jicama
  • 2 tbsp organic Ghee
  • 1/2 tbsp smoked paprika
  • 1 tsp red chili flakes
  • 1/2 tsp cumin
  • 1/8 tsp oregano
  • dash of paprika salt ( or regular salt)
  • fresh ground pepper

Instructions

Peel and wash the Jicama. Trim the top and bottom then cut into fries shape by slicing off 1/2 inch pieces and cutting the fries to a commercial "steak fries" size.

Preheat the oven to 350 F. Place the Jicama fries on a microwave proof dish and microwave on high for 2 minutes. Let cool slightly and pat dry. Toss in the Ghee and spices and lay on a baking sheet.

Bake in oven for 50 minutes, flipping over at the 25 minute mark. Serve warm with whole greek yogurt or dipping sauce of choice .

What the hell is Jicama? Oh boy, if you don’t know you are really missing out. Its a root vegetable, where only the root can eaten, the rest of the plant is actually toxic. Scaring aside, anything you buy at the grocery store is good to go. It is that is packed with prebiotics, high in potassium, water, and for those of you on the new Keto trend ( personally I don’t recommend it) its low in carbs so feel free to indulge yourself.  The Jicama can be super crunchy still if you forgo the nuking in the microwave to release some of the water content before baking. After its nicely warmed up, it gets a Ghee and spice bath before getting toasted up in the oven. Pair it with a nice Chardonnay and a homemade Greek yogurt spread.
