Gooey Gluten Free Vegan Brownies

Ingredients

  • 1 1/2 Bobs Mill Organic Gluten Free Baking Flour
  • 1 cup granulated sugar or such as Swerve
  • 1 tsp organic baking powder
  • dash of cognac or orange liqueur
  • 1 tbsp organic vanilla extract
  • 2 tbsp organic flaxseed meal
  • 1 1/2 cup cacao
  • dash of salt
  • 1 1/2 cups water
  • 3/4 cup organic virgin coconut oil (in liquid form)
  • 1 cup organic walnut halves

Instructions

Preheat the oven to 350F.

In a large mixing bowl mix together the flour, salt, sugar, baking powder, flaxseed, cacao making a well in the middle once well blended.

In the well, place the water, vanilla extract, liqueur, and coconut oil and using a metal spoon mix. Place in the walnut halves, breaking them into smaller pieces as you drop them in and mix again.

At this point its going to be a thick thick batter, dont be alarmed, just use a baking spatula to assist in pouring it into your baking dish and cook for 25 minutes. Cut into 10 even squares and serve warm.

Notes

If your coconut oil is solid, then place in into a microwave safe mug and nuke it in the microwave for 30 seconds to soften.

I know exactly what your thinking. Gluten free and vegan?! ( enter a curse of your choice here). I am really not a fan of the crumbly, cardboard like tasteless vegan products out there, and thankfully since I am not vegan I dont have to eat them. Why exactly did I make a vegan brownie? Cupboard was almost empty, so I had to improvise. But guess what? Happy surprise! These are made with all organic products and came out amazingly gooey, chocolatey, and decadent. You wont be able to tell their both gluten free and vegan, and dare I say…. good for you? They are full of antioxidants and omega fatty acids so I’ll take another please.
