Herbed Avocado Dip

Ingredients

  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint
  • 2 tbsp grated organic ginger
  • 1/4 cup chopped preserved lemon
  • juice from 1/2 of lemon
  • 3 tbsp water
  • 1/4 cup apple cider vinegar
  • 1 1/2 small avocado
  • 1 tbsp Dijon mustard
  • salt and pepper

Instructions

Wash and gather all your ingredients in mis en place.

Place everything into a blender and mix with the water and blend on high. Store for up to 5 days in the fridge.

Here is the situation. You went overboard on your last supermarket trip at the 2 for 1 avo sale, and of course as luck would have it they all ripen to perfection at the same exact time.  I am all for shoveling spoonfuls of the creamy goodness into your mouth or turning it into another chocolate pudding  which actually comes in handy when they are really too ripe a.k.a brown. But the avocado is so much more than that. It is a fruit that is  a beautiful, green, fiber and nutrient full, and delicious addition to any meal.

To keep the avocado a little longer and nice and green, its turned into a dip thats not quite thick enough to turn upside and still stay in the spoon and not runny enough to slip off it. The Herbed Avocado Dip is the perfect consistency to top jammy eggs, dip veggies into, drizzle onto tacos, dress up your salads, or use as a base in your sandwiches to hold all the other stuff together. The lemon keeps it green and fresh while the herbs pack a ton of flavor into each creamy bite. It’s not going to overpower any other dish you might have, and as typical avocado form, will be the silent star of the meal.
