BBB, Black Bean Brownies

Black Bean Gluten Free Brownies

Ingredients

  • 1 15 oz black beans, drained and rinsed
  • 1/2 cup raw pepitas
  • 1 egg
  • dash of sea salt
  • 1 tbsp vanilla extract
  • 7 tbsp raw cocoa powder
  • 1/8 tbsp baking powder
  • 1 tbsp Kirsch
  • 2 tbsp balsamic vinegar
  • 2 tbsp canola oil
  • 1/4 cup granulated sugar
  • 4 tbsp honey
  • 1 60 g dark chocolate almond bar, chopped into tiny pieces

Preheat oven to 375 F and spray a brownie pan with non-stick cooking spray.

Drain the black beans and place in a fine mesh strainer under running cool water until the water runs clear ( about 4 min).

In a blender, fitted with a S blade, add the black beans and pepitas and pulse until they start to crumble a bit. Add the sugar, vinegar, olive oil, egg, vanilla, salt, and honey and blender to incorporate. Stop intermittently to push down any pieces that are moving up towards the top and not blending. Add the water, cocoa, Kirsch and baking powder before giving it a final blend.

Take the chocolate bar and use a knife to coarse chop it into pieces and add this to the batter, use a spoon to stir and pour into your brownie pan.

Bake for 20-30 min. Let it cool before cutting into squares.

Brownies for breakfast? Yup, the BBB can start your day. Then again feel free to pop it in the microwave,  top it with vanilla gelato and call it dessert. These are completely flour and gluten free and packed with protein from the egg, beans, and nuts. Theres also a healthy dose of antioxidants from the cocoa powder and in moderation is low-fodmap. Its not very sweet but can definitely tame your sweet tooth without a rush of guilt afterwards.
