Blueberry Lavender Muffins

Ingredients

  • Juice from 1 can of chickpeas
  • 1/8 tsp cream of tartar
  • dash of salt
  • 2 tbsp Confectioners sugar
  • 2 tbsp Granulated sugar
  • 1 tsp vanilla powder
  • 1/2 tsp Mahlep powder
  • 1 tbsp coconut oil
  • 1/8 tsp baking powder
  • 1 cup gluten free flour
  • 1 cup frozen organic blueberries
  • Dried Lavender leaves

Preheat oven to 350 F and lightly spray 3 mini baking cups with non-stick cooking oil

In a stand mixer beat the aquafaba with cream of tartar, salt, for 8 minutes then add the coconut oil, confectioners sugar and regular sugar

Add vanilla, mahlep, cinnamon, and baking powder before slowly adding the flour until everything is incorporated, about 5-8 minutes. Shut mixer and fold in the frozen blueberries before spooning into baking cups and top with lavender. Bake for 30 min before shutting heat and let cool down for at least 10 minutes in closed oven.

Serve with butter and jam in the morning or with vanilla gelato and drizzled thyme honey for dessert.

I was supposed to make Aquafaba meringues but I royally effed those up. Had to turn the lemons into lemonade as the proverb goes, so welcome to the glorious morning muffin. Aquafaba is the drained juice you get from chickpeas, this way we can all turn recipes that would traditionally have eggs, into trendy vegan alternatives.  Though the Aquafaba whipped up beautifully, I lost my thought process and started to add the sugar while it was whipping as I would typically do for a meringue, instead of at the end so it went from beautiful glistening peaks to a sad liquid mess. Thank goodness that happened or else I would have never come up with this perfectly moist, flaky, and flavorful recipe that even better the next day. The Blueberry Lavender Muffins are low on sugar so they can transform to a nice breakfast topped with a dab of butter and jam or a dessert if paired with a vanilla gelato and thyme honey drizzle. The lavender that tops each muffin adds a unexpected delicate touch to the homestyle tender blueberries for your elegant grab and go meal.
