Roasted Purple Potatoes with OreganoPrint Recipe
- 560 grams organic purple potatoes
- 1 tsp organic Ghee
- 2 tbsp dried Greek oregano
- salt & fresh ground pepper
- celery micro greens or greek yogurt for garnish
Preheat the oven to 350F on the roast setting.
Wash and peel the potatoes and dice into 1/2 inch pieces ( about the size of the tip of your index finger). Toss with Ghee, oregano, salt and pepper and lay on a baking sheet. Bake for 20 min and serve with garnish of choice.
To make a nice dip for the potatoes, mix 1/4 cup Greek yogurt, 1 tbsp Extra Virgin olive oil, 1 tsp lemon juice, and smoked sea salt.
