Organic Acai Powder Truffles

Acai Powder Truffles

Serves: 10 Cooking Time: 15 min active, 2 hours inactive

Ingredients

  • 1 tbsp organic Acai Powder ( 1/8 cup extra for coating)
  • 2 tbsp organic Cacao Powder
  • 1 tbsp organic virgin coconut oil
  • 1/4 cup organic flaxseed meal
  • 2 tbsp organic maple syrup
  • 1/2 tsp organic vanilla paste
  • 1/4 organic raw sprouted pepitas
  • 1 tbsp organic lavender petals ( optional)
  • dash of sea salt

Instructions

Blend all ingredients in a food processor on high for about 5 minutes

On a separate plate pour the extra Acai powder

With two fingers grab a small ball of the dough and roll into the acai powder

Repeat with remaining dough, making the truffles of roughly even sizes and place on a clean plate before chilling in the fridge for 2 hours

At a certain point, I had convinced myself that I would be starting every morning with beautiful food porn worthy Acai bowls topped with nuts, fresh fruit and a good dose of honey. Dreams of visiting Brazil, furthered the Acai bowl dream, unfortunately I only made 1 of them as they were not really to my liking and a bit heavy for my tummy. As it turns out, also apparently not really that popular in Brazil according to my good friend from Sao Paulo. So now that there is a Acai powder in the fridge, and a few packs or the puree in the freezer, I had to come up with a use for it. The second issue that came up, and this was pretty serious, was upon going for a piece of dark chocolate, I made the shocking revelation that I had eaten it all and needed something sweet, ASAP. Rummaging through the cabinet and picking the Acai as the base of the dessert, something glorious soon happened. Throwing a bunch of ingredients into a food processor, I was not quite sure of the results, and had already lamented the couple dollars of powder that I was sure was going to go to waste. Imagine my delight and surprise when I took the first bite, not only did it melt in my mouth, but had all the components I crave in a dessert from sweet to crunchy, a hidden dash of salt, and texture. Brownie points for not only being low Fodmap and vegan but the high antioxidants and vitamins from the maple syrup, Acai, and cacao.
